Grilled Cheese with Tomato Soup

Serves: 1-2

Preparation time: 20–25 minutes  

Ingredients:

  • 4 slices of Nature’s Dream Brown or White Bread
  • 3 tbsp cooking oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 bay leaves
  • 1 tbsp tomato paste
  • 4 ripe tomatoes, chopped
  • 1 canned tomatoes
  • 1 cup chicken stock
  • 120g cheddar cheese, grated
  • salt and pepper, to taste

Method:

  1. In a saucepan, gently fry the onion in the oil over medium heat until soft and golden. Add the garlic and bay leaves and cook for 2 minutes.
  2. Add the tomato paste and ripe tomatoes and cook until soft. Add the canned tomatoes, chicken stock, and salt and pepper. Leave to simmer for 15 minutes. Remove the bay leaves.
  3. Heat a frying pan over medium heat. Once hot, add a slice of bread, buttered on both sides. Add cheddar and top with another buttered slice of bread. Once the cheese is starting to melt and the bread is golden brown, flip and let cook until well browned. Repeat for the other sandwich.
  4. Pour the soup into a blender and blend until still slightly chunky.
  5. Enjoy!
